Wanted to love this book but I found the reading tedious and although the photography was very nice, without captions to relate to the text they were just fluff. Most of us are not planning to sharpen our own knives and to have no mention of honing which is important to the home chef seems very odd. There was a great deal of information about metals and history (reads more like a text book) but little that qualifies for most of us as "The definitive guide to knives, knife care and cutting techniques.
